While having dinner tonight and thinking about summer and fresh vegetables, I recalled an article about the history of baby carrots that I had read in Eaten last summer. Eaten is a magazine dedicated to food. Its subtitle is Food History Magazine. The story of baby carrots, written by Jessica Kehinde Ngo, describes how they were born, or rather how they were created in the USA.
